Cream of Pea Soup with Bionola FETA
Made from goat’s and sheep’s milk, Bionola FETA is produced in Greece (PDO). Its creamy texture and flavours will delight you.
It is suitable for an endless variety of light, easily digestible recipes, as Bionola FETA is lactose-free.
Ingredients :
- 500 g frozen peas
- 1 packet of Bionola Organic FETA (150 g)
- 1 large courgette
- 1 bunch of fresh mint
- 2 vegetable stock cubes
- 1 litre of water
- Salt and pepper
Preparation :
Cook the peas and courgette in 1 litre of water with 2 vegetable stock cubes for 10 minutes.
Remove from the heat;
Add the bunch of fresh mint and 3/4 of the packet of Bionola Organic FETA.
Blend everything together in a food processor until you have a smooth, frothy soup, then garnish with small cubes of the remaining FETA.
Optional: sprinkle with toasted almonds
